Soup cheese and beer, bacon and Croutons

Did you ever thought that you can make a soup with beer? Do you think something strange truth? You can remove yourself with doubts preparing this delicious soup recipe of cheese and beer, bacon and Croutons. A fiesta of flavors for your palate.

Option 1 soup with cheese and beer, bacon and Croutons

It's a recipe that takes its time, so you can save it for a special occasion or for the weekend. The items you need are readily available in the markets for which are not spoilt.

Ingredients (for 4 people):

  • 1 can of beer
  • 1 cup of chicken broth
  • 1 stick of celery
  • 2 cloves garlic
  • 1 onion
  • 60 grams of butter
  • a pinch of dried thyme
  • 30 grams of flour
  • 1 cup of liquid cream
  • 200 grams of Cheddar cheese
  • 100 grams of any cheese smoked (can be cheddar)
  • 5 slices of bacon
  • Salt and pepper to taste
  • Enough chopped parsley
  • Croutons to taste

How do I prepare it?

  • 1 - makes a chicken with a dehydrated cube broth and use a cup for this recipe.
  • 2 - in a skillet, fry the bacon cut into small cubes with very little oil and removed.
  • 3-uses the same oil and fry the onion, garlic and celery cut well.
  • 4 - Add the thyme and when everything is browned, pour half the beer, leaving it to reduce (this takes approximately 8 minutes).

  • 6 - in another skillet or saucepan, put the butter, and when it melts, check out the flour, stirring with a wooden spoon to prevent it browned without sticking.
  • 7 - adds to the previous stock along with the cream at room temperature.
  • 8 - when it thickens a little preparation, incorporates the cheeses cut into pieces, stirring well to prevent merge, salpimenta to taste.
  • 9 - pour the rest of the beer and continues cooking simmer five minutes.
  • 10served with chopped parsley and Croutons.

Option 2 soup with cheese and beer, bacon and Croutons

A recipe similar to the previous one, with some ingredients that are repeated (4 major title and others also) and with new elements to give another flavor to the soup. Get to work!


  • 1 and 1/2 tablespoons of olive oil
  • 1 cup corn
  • 250 grams of bacon
  • ½ Onion
  • 2 cloves of garlic
  • 1 stalk celery
  • 1 jalapeño
  • ½ cup chopped red pepper
  • Salt and pepper to taste
  • 4 tablespoons of flour
  • 1 can of Lager
  • 1 tablespoon horseradish sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Tabasco sauce
  • 1 and ½ cups chicken broth
  • 1 and 1/2 cup cream
  • 1 teaspoon smoked paprika
  • 4 cups cheddar cheese
  • 1 cup of grated or strands in mozzarella cheese
  • Croutons to taste

Instructions for its preparation:

  • 1 - in a frying pan, heat the olive oil and add the corn, so Cook (ten minutes), remove and reserve.
  • 2 - in the same pan, fry the bacon cut into cubes until it is crispy. Remove and reserve on absorbent paper to remove excess fat.
  • 3 - Add a little more than olive oil and add all cut quite small: garlic, onion, celery, jalapeno and pepper. Salpimenta.
  • 4 - includes flour and the can of beer. Let it cook about 7 minutes.
  • 5 - heated the cream at low temperature in another saucepan.
  • 6prepared chicken broth.
  • 7 - pour the cream into the pan with the mustard, broth, Horseradish and tabasco and paprika sauces.
  • 8-mix well with wooden spoon and let that you cook 20 minutes (until thickens).
