For the salad:

  • 200 g of fresh peas

  • 2 radishes

For the vinaigrette:

  • 1 shallot
  • 20 grams of Dijon mustard
  • 10 grams of honey
  • 10 grams of sherry vinegar
  • 60 grams of olive oil
  • 1 a bit of lemon juice
  • 1 a little chives
  • 1 pinch of salt


  • First prepare the vinaigrette: Peel and chop the shallot, well put in a bowl and add the honey, mustard, lemon juice and vinegar. Mix well and pour the olive oil. Whisk to emulsify. Chop the chives and add to the preparation. Room and book.
