1 tahini (sesame butter)

This recipe is a basis for other preparations with Sesame. For this purpose, you should wash and soak ½ kilo of Sesame unroasted lukewarm for three hours, then it slips without discarding the water. Then it is placed in the food processor, adding the soaking water until you obtain a homogeneous paste. Finally, it is packed in a glass jar and stored in the refrigerator.

2 Hummus

This popular and versatile dish originating in the Middle East is prepared in the following way: placed 300 grams of previously boiled chickpeas in a food processor (to be dry, weigh half), 2 cloves of finely chopped garlic , 2 tablespoons of sesame paste (tahini), ½ teaspoon paprika powder, 1 teaspoon powdered cumin, 1 sprig of parsley well chopped , the juice of half a lemon, 3 tablespoons olive oil and sea salt to taste. Process all ingredients until you obtain a homogeneous paste. You can eat fresh or store in the refrigerator in a sealed container.

3 oats and Sesame cookies

The ingredients to prepare these rich cookies are: 350g of tahini, 150g of brown sugar, 150g of sunflower seeds shelled 6 tablespoons of lemon zest, 350g of fine oatmeal, 2 tablespoons of sesame seeds. Mix in a bowl the tahini and sugar; Add sunflower seeds and lemon zest. Then add the oats, add water until dough acquires a light and smooth consistency. Grease a plate or baking dish; with a spoon to accommodate small portions of the preparation; make a slight pressure on each pile and finally use sesame seeds for garnish on top. Cook in the oven (at medium temperature) for 15 to 20 minutes.

4 Sesame milk
