The spring is already with us, which leads to contemplate beautiful flowers around us, and time to taste some delicious cakes and carrot cookies!
After Easter, it comes the time for preparing dishes where the main ingredient are the carrots. The texture is moist and delicious, with a cream cheese icing, make a very good and different combination.
Carrots glazed cheese biscuits are a snack or snack that will delight children and adults. Offer them invited vegetarian is a compliment that you will appreciate. A healthy dessert that will become the favorite of gourmands.

Ingredients

  • 1 1/2 cups flour (200 g)
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon of baking powder in polco
  • 1/4 teaspoon salt
  • 1 teaspoon of ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • 1/2 cup unsalted butter
  • 1/2 cup (100 g) granulated sugar
  • 1/4 cup (50 g) brown sugar
  • 1 large egg
  • 1 teaspoon of vanilla extract
  • 1 cup (110 g) finely grated carrots
  • Pecans or cinnamon for decoration (optional)

For glaze cheese:

  • 1 type Philadelphia cream cheese Terrine
  • 6 tablespoons softened butter
  • 1/2 teaspoon vanilla extract
  • 2 cups (220 g) powdered sugar or icing sugar 

Preparation

Preheat the oven to 170 degrees Celsius.
In a bowl large blend the flour, baking soda, baking powder, salt, cinnamon, ginger and nutmeg for 20 seconds, set aside.
In the bowl of an electric stand mixer fitted with a paddle, mix the butter, granulated sugar and brown sugar, until creamy. Mix egg extract and vanilla. With fixed low-speed mixer, add half of the flour mixture and beat until the ingredients are integrated. Then put the carrots, and add the remaining flour mixture. Make a homogeneous mixture. You scrape the sides and bottom of the bowl with a spatula to make sure that everything is mixed correctly.

You must remove 1 and 1/2 tablespoon of dough and drop onto silicone molds lined with sheets for baking. Cookie mold can have the forms you want: Star, round, square...
Bake in preheated oven until set (which should still be soft to the touch, about 11-12 minutes )).

For glaze:
In a bowl beat the butter and the cream cheese until it is soft and fluffy.
Mix the vanilla and powdered sugar and beat again until it is soft and fluffy (you can put it in the freezer about 5 minutes and then mix once more).
Decoration of carrots
If you are going to do the decoration of carrot or other drawings, put on one side about 2 tablespoons of green food coloring and 2 dye color orange, separated in two cups of shot. With a pastry sleeve, get first carrots on the white icing, and another manga drawing pastry, draw sheets.
