Clams with artichokes and squid

For this dish, simple and suitable for coeliacs, you need the following ingredients (4 persons):
  • 12 artichokes
  • 400 g of small squid
  • 400 grams of clams
  • 2 onions
  • 1 clove of garlic
  • flour
  • half a lemon
  • chopped parsley
  • Salt
  • olive oil
First, thoroughly clean the artichokes, remove the outer leaves and rub with lemon. Boil with salt and a tablespoon of flour for 12 minutes. Drain when tender, saving the broth. Then, put oil in a skillet and saute the onions, add a tablespoon of flour.
Saute and add 4 saucepans of broth, then add clams so they open, sprinkle with chopped parsley. In another frying pan Saute squid clean and seasoned, adding a whole garlic clove. Mix with the previous preparation and serving.

Quinoa with clams soup

For four people, you need the following ingredients:
  • 200 g quinoa
  • half kg of clams
  • 2 carrots
  • 3 artichokes
  • 1 tomato
  • 1 onion
  • 1 glass of white wine
  • olive oil
  • Salt
  • parsley
  • green onion
  • Optional: algae
Chop the carrots and onion and sauté in a little oil. Then, clean the artichokes, chop and add to the casserole. Add the grated tomato and the chopped parsley . Wash quinoa and toast it in a pan without oil and then add to the soup.
Season and place the algae. Put the clams in a pan with the white wine. Cover and cook for a minute, until they open. Mix all ingredients and cook for 15 minutes. Serve in deep dish flavored with onion, chopped scallions and a little oil.

Swiss chard with clams and green sauce

It is a dish very nutritious and full, for which we need the following ingredients:
  • 20 clams
  • 6 Swiss chard
  • 4 eggs
  • 2 cloves of garlic
  • 100 ml white wine
  • 1 tablespoon of flour
  • 100 ml of water
  • parsley
  • Salt
  • olive oil
Separate the chardstalks, cut into sticks and cook for 10 minutes. Drain and reserve. The leaves also do with canes and cook about 3 minutes. Drain and reserve.
To prepare the sauce: Peel and chop the garlic, sauté in oil, Add flour, leave it to cook a little and pour wine and water. Add chopped parsley. Then the clams and cladodes canes. Cover and cook for 3 minutes until clams open.
